Pale yellow with a fresh green hue.
Aroma:
Complex, displaying aromas of exotic fruits and hint of lantana.
Palate:
Great texture, fine acidity and persistent length.
Winemaking:
Short maceration on skin, precise cutting during the pressing. Partially fermented in fine French oak, partially in stainless steel with temperature control. Racking of gross lees after quite generous rest on lees.
Ideal with what food:
Seafood.
Some green salads with goat cheese.
Pasta with herbs and ripe tomato sauce.
