Winemaker notes:The style is clean and fresh. Showing citrus, white stone fruit, mineral and saline notes. 30% new oak, 9 months maturation.
Vintage:
2018 was a very good year, which delivered good yields with beautiful concentration and flavour. the summer was cool & dry with small amounts of rain allowing the fruit to ripen slowly retaining good natural acidity.
Colour:
Pale, lemon gold.
Aroma:
Fresh nectarines, a touch of lime leaf and some nutty characteristics, some delicate spice from the oak and a little creamy lick on the finish.
Palate:
Nectarine, red apple, peach, a touch of oak, some baking spices and a delicate creamy mouthfeel all bundled together around vibrant acidity.
Winemaking:
Whole bunch pressed straight to 500lt puncheons for an indigenous yeast ferment, post fermentation it was racked into a mixture of new and one year old puncheons for 11 months before bottling. The wine went through a natural malolactic fermentation.
Ideal with what food:
Roast chicken with thyme & sage.
