Winemaker notes:
Appealing, light ruby.
Aroma:
Red sour cherry. Fruit tree bark and gum.
Palate:
Red plums, slightly dried red cherry, well textured tannins.
Winemaking:
Gently destemmed fruit, cold maceration prior fermentation. Fermented in the small fermenters with daily pigeage. Indigenous yeast used only.
Pressed and elevaged later in French oak barriques on light lees with minimum intervention.
Ideal with what food:
Perfect with sweet duck breast, neutral vegetable salad.
