Winemaker notes:
Colour:
Pale yellow with a fresh green hue.
Aroma:
Complex, displaying aromas of exotic fruits and citrus.
Palate:
Great texture, fine acidity and persistent length.
Winemaking:
Destemming and crushing. Short cold maceration on skin. Juice has been settled and racked off lees.
Partially fermented in old French oak, partially stainless steel tank with temperature control. Fermentation took over 15 days.
Wine has been racked of gross lees into 1300l oak vat for resting and ageing.
Ideal with what food:
Seafood.
Some green salads with goat cheese.
Pasta with herbs and ripe tomato sauce.
